- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Cook the ground turkey or beef in a skillet over medium heat until browned, about 6-8 minutes. Drain any excess fat. Add the taco seasoning and a little water according to the packet instructions. Let simmer until fully coated.
- Crisp the tortillas:
- Spray both sides of the tortillas lightly with cooking spray.
- Place them on the prepared baking sheet and bake for 5-7 minutes until crisp. Flip halfway for even crispness.
- Assemble the pizzas:
- Spread a thin layer of refried beans on each tortilla.
- Top with the seasoned meat mixture.
- Sprinkle a layer of shredded cheese on top.
- Add a second tortilla on top (optional) for a true layered pizza, or skip for a single-layer version to save points.
- Bake the pizza for another 5-7 minutes until the cheese melts.
- Top with taco sauce or salsa, diced tomatoes, green onions, and cilantro.
- Serve warm with a side of sour cream if desired.
