Lemongrass-&-Coconut Poached Salmon

Ingredients:
* 3 tablespoons coconut oil, divided
* 1 (1-inch) piece fresh ginger, peeled and grated
* 1 large shallot, minced
* 1 stalk lemongrass, chopped fine or smashed
* 1 (13-ounce) can coconut milk, well shaken
* 1 whole star anise
* Heavy pinch Aleppo pepper or crushed red pepper, plus more for garnish
* 1/2 teaspoon kosher salt
* 4 (5-ounce) salmon fillets
* 4 cups chopped spinach or kale
* 3 cloves garlic, finely chopped
* 1 lime, zested and quartered
* Sea salt for serving (optional)
* 1/4 cup roughly chopped fresh basil
* 1/4 cup roughly chopped fresh mint
