Cabbage, Carrot, and Apple Salad

Ingredients

  • 2 cups green cabbage, shredded
  • 1 cup red cabbage, shredded
  • 1 large carrot, shredded
  • 1 large apple (Granny Smith or Fuji works well), julienned or thinly sliced
  • 1/4 cup fresh parsley, chopped (optional)
  • 2 tbsp apple cider vinegar
  • 1 tbsp olive oil – (can use less for lower points, or use a 0-point dressing)
  • 1 tbsp honey or 1 tsp sugar (optional, for a touch of sweetness)
  • Salt and pepper, to taste
